The grandson, Mr. Kobayashi from Chiba Prefecture, retired from a company in Tokyo and inherited the brewery, which had been dormant for 150 years, to keep its history alive.
This sake brewed by Fukunoka is lightly muddled with a moderate aroma. After the sweet and umami taste, it finishes with a bitter taste. It has a natural and gentle taste with the sweet and savory taste of rice☺️.
Last year, his family came to Japan and restarted the sake brewing, which is not easy to do without a lot of determination.
