This is my first time drinking Flax Cat Spark.
The aroma is totally sparkling wine! The sweetness is subdued, and the acidity and bitterness are distinctive. You can feel the bitterness more than the normal Flax Cat. I've written a lot about it, but I think it's such a good sake that I think it's the perfect form of sparkling sake. The technology used to make this kind of sake is amazing. And it's great that you can buy it at a price you can normally drink.
After drinking this sake, I reconfirmed that I like sour sake. It's a definite repeat.
