Brewed with a unique yeast, this is our companion for tonight. How does it taste? When the bottle is opened, it has a sweet aroma. When you put it in your mouth, you can feel it thicken. It has a strong sweetness like peaches, but when you swallow it, your mouth feels refreshed. The acidity does a wonderful job. It's delicious...how could it not go well with tofu and salt? The sweetness of the sake is present, but it doesn't interfere with the sweetness of the tofu, which is also wonderful. After the broccoli aurora sauce, it turns light and dry. It is also delicious. The yellowtail sashimi with salted yuzu peel goes great with this dish. The aroma of yuzu and a hint of peach, my mouth is a ball of fruit. The main dish, yellowtail arao daikon (radish with yellowtail on top), is a peach flavor that increases when paired with this dish. It was interesting. It was a different kind of sake, but it was delicious no matter what it was paired with!
