Yajima Sake Bespoke from Kangiku Brewery
It has been a long time since I had this Kangiku. It is still delicious.
Aizan made in Kenzan, that is, Ken Aizan.
It has the mellow flavor and sweetness that is typical of Aizan, and the bitterness that is typical of Kangiku adds a nice accent.
On the second day, the bitterness becomes less pronounced and the sweetness stronger, and the mouthfeel is gentle.
Although it is a junmai daiginjo, the lingering aftertaste is modest, and it can be enjoyed as it goes along.
The Yajima Sake Shop's Betsuatsurai is a draft sake, and I had it early in the purchase process. It was more subdued than the usual Kangiku, but it also had a slight piquancy.
It was a very tasty sake and very satisfying.
