We received "Kinmeisen," the highest-ranked daiginjo-shu from Koshino Katora.
This sake is only released once a year in November.
The brewing water is from a private well with a hardness of 0.47, which is rare in Japan.
It is a light, dry sake with a refreshing aroma and taste, not rich.
I felt it was a very high level sake as a food sake.
