I wanted to drink this one too, Kameko-Hanabishi from Saitama, but they say it's a new flavor with Saitama G yeast.
I did a little research and found out that it's a Capueti high-productivity yeast.
Well, let's drink it anyway.
The aroma is surprisingly not that spectacular, and the graininess that is common in junmai unfiltered sake is competing with the graininess, settling into a slightly aromatic junmai sake.
The taste is more mellow than sweet, and the fruity flavor is just right, expressing the taste of ripe fruit, making it very drinkable!
The only drawback is that it would probably be more beautiful if the graininess was reduced a bit more.
Overall, a reasonably good sake.
