I thought I hadn't seen him at my first Yamasan🍶 Nagano, and then I heard that he is a revived brewer. The brewer is a young master brewer in his 30s who trained in Kyoto!
The aroma is sweet and gorgeous, and the mouthfeel is sweet as well. The umami is not strong.
It is crisp and clean, but I felt a strong sense of alcohol on the finish.
It has a greenish-yellow vegetable flavor and a kiwi-like fruitiness that is typical of Yamae Nishiki. I couldn't tell.
I was told that both the brewer and the brewer's staff are growing, but this sake had a sense of refinement. I had high expectations for the future 😄.
