Hidakami is made from Gin no Iroha, a new brewing rice from Miyagi Prefecture😊.
The yeast used is Hidakami's own yeast (F series yeast).
You can feel the fullness of Gin no Iroha, but unlike Haginotsuru, the fruity taste is suppressed. but unlike Haginotsuru, the fruity taste is suppressed and the unique (alcohol-derived?) spiciness and sharpness of Hidakami stand out✨.
It's a great way to differentiate yourself from the other Gin no Iroha 😊.
