I found this Bodai Hashiwado Mimuro Sugi at Seibu Ikebukuro on a whim. I bought it on impulse because it was low in alcohol and had a cool jacket.
The aroma is mild lactic acid and cemedine. I like it. No gassiness.
Crisp sweetness. I expected a harsh acidity after that, but it's also refreshingly sour and crisp.
The aftertaste is a gentle acidity that lingers on smoothly.
The level is high. I thought it was the kind of sake served at a nice restaurant. I have not had much luck with Mimuro Cedar since my favorite liquor store does not carry it, but I would like to try it in the future.
