On the first day, the bubbles were so strong that it was difficult to open the cap. On the same day, we drank it with the lees mixed in due to the strength of the fizz. The gentle sweet aroma reminded me of a sweet taste, but the fizz was so strong that it was refreshing with a slight gap.
On the second day, we had the clear supernatant with the lees settled. The sweetness of the aroma did not change, but the taste was nice and clean.
On the third day, we had the last of the wine with the lees remaining. The fizzy sensation had subsided, and the deep flavor and mild sweetness made me want to enjoy the sake on its own.
It was a nice bottle to enjoy the daily changes.
