Batonage" is a term used in winemaking to mean stirring the lees with a baton during the "sur lie" process, in which the lees are kept in contact with the wine while it is still on the table.
It has a refreshing fruity sweetness on the nose, and when you drink it, the cool white wine-like acidity matches the umami of the Yamadanishiki rice, with a clear texture and a slightly dry, clean finish.
This is a sake that is easy to pair with Western food!
