This is my first brand, but it is a raw sake that the liquor store highly recommends.
It starts out with a melon-like fruity flavor that is sweeter than sweet, but soon the rich, dark umami comes in with a bang, and it finishes with a slight bitterness that is very refreshing.
When it is just out of the refrigerator, it has a bit of an alcoholic taste, but if you let it cool in the glass for a while, the umami comes out in full force, and it is delicious.
It has no peculiarities and has the taste of a classic sake, so it goes well with anything as a food sake. I think it would be easier to match with light-flavored western Japanese soups such as bonito soup stock, chinese chowder, light soy sauce, etc.
