Shinkame Shuzo's brewing water comes from 150 meters underground from the Motourakawa River that flows nearby. The water is hard and produces a dry junmai sake with a firm structure.
The Junmai brewery is particular about the sake rice, much of which is contract-grown and suitable for sake brewing. This Yamahai Junmai Black is made from Gohyakumangoku rice grown in Niigata Prefecture and has a clean and crisp finish.
Furthermore, organic rice has been actively incorporated, resulting in a sake that is rich in flavor and rich in texture, yet light in taste. This sake is being further refined as the ultimate food sake.
