A dry sake that tastes great hot.
It is delicious cold, but as the name suggests, it really comes into its own when heated. Even when served hot, it does not lose its balance and has a strong dry and refreshing flavor, making it a perfect mid-meal sake!
On the second day, I grilled some scorpionfish I caught in Izu and poured hot sake over them to make a scorpionfish sake. I read in a book that this is the way the genuine sake drinkers of Tokushima Prefecture drink. The flavor of the scorpion fish soaks through the sake and it's really delicious! The light and dry taste goes well with this way of drinking.
