Sawaya-Matsumoto is personally considered to be one of the twin great sake breweries in Kyoto, along with Jyukoku. This is one of my favorite Matsumoto sake breweries, Moribashira, and I have no choice but to drink it! There is no other way but to drink it! Let's go!
The sound of bubbles and the sweet and fresh aroma of muscat spread softly, and when a little mineral water is added, the fresh and refreshing sake, which is mainly acidic and gaseous, spreads endlessly. Of course, there is sweetness, but it is not too strong, and the acidity and bitterness create a delicious flavor, a strange experience that cannot be experienced with modern sake today. This bitterness creates a sharp, dry taste that pierces the throat, allowing the drinker to enjoy a light yet bodied sake that never gets boring. For beginners, I highly recommend the Sawaya-Matsumoto Moriboshi Nama Sake! You will be able to enjoy the goodness that is typical of nama-zake and that is not found in sweet and fruity sake.
