I opened a bottle of the purchase I made when I visited the brewery in February.
This is the Hidahomare version of the Enayama Junmai Daiginjo.
It is gorgeous, but has a sourness that is pleasantly different from the sweetness of the Yamadanishiki version, which we compared.
Rice:100% Hidahomare produced in Gifu Prefecture
Rice Polishing Ratio : Koji Rice 40%, Kake Rice 50%.
