Aomori's local sake happened to be available at the supermarket, so we bought it immediately. The clarity and smoothness of the water goes without saying, and the initial gentle umami and sweetness are pleasant. The aftertaste of Hachisen's unique tangy sourness is very pleasant, and goes well with salted squid.
I wrote about what I thought, but I thought it was still difficult to reach a flavor and taste like 00. However, Hachisen's special junmai goes well with any kind of sake.
