Ishikawa Prefecture has many heavy-boned sake. I thought Noto or Kaga would vary depending on the area, but both are heavyweight. Among the Ishikawa sake, my favorites are Tengumai, Tedorigawa, and Tsunekigen. Personally, I feel that not only Yoshida Kura but also Tedorigawa has been producing modern sake for young people recently, which makes me feel a little sad, This Yamahai Junmai. But this Yamahai Junmai...ah, it's Yamahai. The higher the temperature, the better it tastes. The more the temperature is raised, the more delicious it becomes. You've got it, Tetorigawa!
