The aroma seems to be sour? When you drink it, it has more umami and sweetness than acidity❗️ and gas, wildness, minerality, umami astringency in the latter half, I like it a lot among the recent ones I've had.
The first time I saw this, I thought it was a little too much, but I was surprised to find out that it is not.
Koshihikari, I didn't know it could be made into such a delicious sake by the way it is brewed. I want to apologize to Koshihikari 🙏.
