I had the opportunity to buy some!
The aroma is sour and slightly muscat-like. The taste is sweetness first, followed by bitterness and sourness, and comes together nicely. It is similar to Shinmasa, but the sweetness is more pronounced than Shinmasa. It's sake, but it's delicious without being sake-y or alcohol-y! I know it's only for this period, but it's delicious! Too bad you can't buy it. As a pairing, I would say sashimi or a single dish. I think it would lose out if it is strong flavored. Thanks for the delicious sake!
