It has more acidity than I imagined. It is light and refreshing, with a weak aftertaste, but the acidity lingers and is very good. The brewery uses 100% Hitomebore grown by the students of Hanamaki Agricultural High School, the brewery's hometown. I hope they will continue this kind of project. The appetizers were saffron sashimi, edamame, and shrimp cutlet, all of which went well together. It's a delicious sake that doesn't lose out to the flavors of the sauce and sauce. My personal favorite: ★★★★☆
