Two consecutive pitches of sake from the Oyataka Brewery. This one was also purchased at the brewery.
The first taste in the mouth is bitterness. After that, there is a rich umami flavor.
At my favorite liquor store, I heard that it goes well with fermented foods, so I paired it with mackerel narezushi. ◎
After about 3 days, the flavor changes to a dark muscat-like fruity stand-alone flavor. Strange.
It was an interesting and delicious sake, including the change in flavor.
