Gin-UTA is a collaboration between three Hiroshima sake breweries, each of which prepared two bottles, one spherically polished and the other shin-gin polished (flat polished), for a total of six bottles in the set. I bought it to compare the drinks.
The Ryusei Shin Gin Seibai has a calm aroma reminiscent of young grass. It has a gentle attack, followed by a sweet and sour taste, and in the latter half, a spiciness rises up and finishes with a lingering spiciness.
It is a sudden change from the impression of the aroma and attack. It is like reading a mystery novel, with an unexpected ending awaiting you.
