Gikyo is always wrapped in newspaper, but when you open it, you always seem to be overwhelmed by the strength of the typeface 💪.
This time, I try to drink it, imagining that it must be balanced in taste as it is 100% Yamadanishiki from the Tokushu A district in Tojo, Hyogo Prefecture.
The smooth texture of the tongue is filled with the sweetness and umami of the rice, and flows through with a slight bitterness.
I wonder if the sweetness can also be felt because it is made with tailings.
After all, it is well-balanced and has a good sharpness👍.
