Interesting label, I bought it.
Yuho Junmai Ginjo, 75% Miyamanishiki, 25% Yamadanishiki
The aroma from the glass is robust. Muscat-like, white wine-like aroma.
In the mouth, the acidity is very strong and assertive. It is a very assertive sake, with a fairly firm umami flavor.
I am not sure what happened after listening to the music, but I can say that the energetic koji worked well to produce a delicious sake! I guess it is like that.
It is an excellent sake for those who want to savor sake and enjoy the aftertaste. ^_^
After one day, sweetness has appeared.
The acidity has settled down. It has changed quite a bit.
