The fifth sake tonight is made from a sake rice called Sakonishiki from Shimane. This is the first time I have heard of this rice. There are many kinds of sake rice.
It is a very dry sake, but the umami of the rice can be felt well, which is quite good. This is a good sake for a meal, especially for sushi 🤔.
