The Tsuchiya Sake Brewery in Saku, Shinshu, which makes "Kame no Umi" and "Akanesasu" sake, is the distributor of the "Akanesasu Kai".
This is a limited-edition draft sake.
Akanesasu is made with sake rice produced in Saku, and although it is not flashy in general, it has a tasty flavor and a very high quality rice flavor.
The BIO version, which I drank over two days yesterday and today, is a good sake with slightly more bubbles and a smoothness that contains a potential umami.
Yesterday
Tomato, corn and tuna pasta with leek egg and shrimp mayo.
Today
With pork radish and ham salad.
