It is a special pure Yamahai sake.
When you put it in your mouth, you feel a subtle stimulation on the tip of your tongue that you are not sure if it is gas or sourness.
Then, you can feel the juicy apple-like light sweetness, acidity, and umami. The sake is firm and thick, which is probably only possible with Yamahai. It is a very well-balanced sake. It is easy to drink on its own. Tasake's Yamahai with grilled sardines as a side dish. I can't get enough of it.
