I tend to skip keeping track of my drinking at home, so I'm going to keep a record of my drinking this year as a reminder. I started with a nama sake from Tanaka Rokugo, the first in the Hanpukai. I've been to Itoshima, Fukuoka many times for the oyster house and love the place, but I didn't know there was such good sake there. It is neither too sweet nor too spicy, but has a perfect balance of freshness and flavor. It is not too sweet and not too spicy, and has a fresh, unpasteurized taste. It is lightly muddy, but refreshing and goes well with sashimi.
