They say 20% koji determines 80% of the taste!
I don't know, of course, because I don't make sake, but I wonder if they chose this title because they don't talk much about koji.
The taste is light, almost like a white wine.
The bonito flakes they prepared for me were superb and went well with it!
It seems to go well with almost all fish dishes.
