I had always requested for a "refreshing and gorgeous nama-shu" and asked the store staff before buying it, but since I had already had a variety of sake at the store💦, I made my choice based on my feeling and not on what I was told.
I thought I couldn't go far wrong with the hard-core label and the 59% rice polishing ratio, so I hedged my bets and bought it. The aroma wasn't spectacular, but the strong acidity, yogurt-like aftertaste, and slight carbonation went well with food.
I had a great dinner with some tofu marinated in miso koji given to me by my mother and roasted over a gas burner.
