Hojoi Junmai Daiginjo Green Nanako Nuri
This sake is polished to 49% and seems to be made from Yamadanishiki for the koji rice and Houhai rice for the kake rice.
It has a faint ginjo aroma (like an apple) that changes to a bit dry if you keep it in your mouth for a bit. It's very light on the palate. But it has a solid rice flavor.
It is like Toyohai and proceeds lightly, wanting to drink the next one.
Today, they served it with salted squid, but if you add some snacks to it, you can drink it more lightly than if you drink it by itself.
