The same aroma of rice malt, the rich umami and sweetness of rice spread gradually with a little acidity and bitterness, and the lingering umami of rice is quickly quenched by a slight spiciness of alcohol while leaving a lingering aftertaste.
It is a refreshing and fluffy sake with a good sharpness that goes well with meals and is also delicious on its own.
It went well with tuna from Miyagi Prefecture, hamachi sashimi from Ehime Prefecture, game-ni, scallops marinated overnight in sansho (a Japanese pepper), and musubiko.
