3. Aizan from Joyo, unfiltered unpasteurized sake. It is made from rice grown in Yoshikawa-cho, Miki City, Hyogo Prefecture, in a special A district. The mouthfeel is sweet but not cloying, and the taste is refreshing. About 2,200 yen, Otsuka Sake Shop, Honmachi, Tokyo.
