At my first visit to a new liquor store, I requested a mild umaguchi (flavorful) sake, and this is what I got.
I had drunk Yuho many times before, and it had a very clear umami taste, so I was a bit surprised, but after listening to the owner's explanation, I decided to give it a try and bought it.
I thought, "What the heck, this is delicious.
It is mildly umami, just as I ordered.
It has a strong umami in the mild umami-guchi category, but it's very mild and has a long, smooth aftertaste that is perfect as a mealtime sake.
I was wondering what to do if it had an aged taste since it is a 2019BY, but it seems that it is not aged at a low temperature or something, but just to increase the umami.
I will buy this again.
