In July, I was shocked to see the news of Hozan Brewery's bankruptcy proceedings. I had hoped that they would be able to take over the business and continue, but it seems that the decision was made the other day. Although it is a really small brewery, it has won many awards for its sake using rice rice such as Koshihikari and Shinnosuke, various kinds of delicious fruity amazake, drinkable sake lotion, and sake brewery tours by the famous proprietress, all of which I thought would be around forever, are suddenly gone, and I feel sad. Thank goodness... The sake brewery hadn't reopened for sales and such yet, but I'd like to visit again. This is Koshihikari Junmai Ginjo-shu from the June brewery. This old Masu (sake cup) with an old design of Hozan was given to me by the proprietress. I savor the sake with sincerity. The aroma of the Masu's cypress wood is fragrant, and the Koshihikari rice aroma and ginjo aroma are clean and crisp, The smooth taste is sweet and smooth, The mouthfeel is smooth and smooth, with a firm sweetness and a deep, slightly astringent flavor, The bitter, spicy, slightly dry taste in the back of the throat is delicious. I want to drink Shinnosuke with a rice bag label when it reopens.
