Sentori means "hermit crane," and if you ask me, I can see why the lid is the red, white, and black color of a crane. This brewery has made all of the rice used for this sake a domaine. The rice is grown in the same water vein as the water used in the brewery. They are very particular.
First of all, when you open the bottle, it smells like wine with a slightly low acidity. When I drank it, it tasted sour but clean. It tastes a bit like muscat, like a white wine with low bitterness and acidity.
It is not too sweet, so it seems to go well with food. Maybe white fish sashimi or white sauce would be good. I would like wine lovers to try this sake.
