This is the first Shibori of 2021BY.
It was cold and I completely forgot to store it at room temperature when I realized... 😱.
If this happens, let's go with room temperature! And.
I was afraid to open it and kept it in the corner of my mind and it went through two hot summers... 😱😱
And then the time came suddenly 😱😱😱😱
When I opened the bottle, there was an aged aroma like soy sauce at first, but a fresh aroma existed beyond that 😮😮.
When I only take a sip of the supernatant, it has the aroma of Shaoxing wine that you can find in old wines, with a strong sherry-like flavor, and there is also a strong sense of freshness 😧🫧 with a weak bubbling 😧.
When I mixed the oli... the bubbles are more fizzy, the aged feeling recedes and the flavor is up ✨ totally good 👍!
I really think this is the way to go 😆.
Two days later, I wanted to try it chilled...

It tasted so thin 😢.
