Frankly sometimes I think Akabu is too sweet for me. But this special collaboration with 中務 is something different - on palate it comes with fruity sweetness like melon & banana, but the sourness is quite prominent when tasting - slight hint of citrus and lime. Also lactic acid feel of yogurt cream and milk is spot to balance the sweetness. Bitter tastes like tangerine at the end - which adds a level of complexity to this sake. Mild finishing.
Overall a well balanced sake!
