Daiginjo-shu 🍶✨ from Otsuka Shuzo, a small brewery in Nagano that brews Asamatake.
I was in Nagano in the fall and happened to see this brewery near my friend's house, so that's why I went there.
(Although they were surprised that it was early in the morning on a weekday😅laughs)
The brewer told us that the quality of the Daiginjo was at the level of the exhibited sake, but that he didn't want to release it, but wanted it to be enjoyed with a meal as well as for customers to enjoy a luxurious evening drink.
The taste is very gentle, with a soft aroma and sweetness that spreads and finishes nicely 😌 Yum! It's delicious ❗
This brewery uses hard water, which is rare even in Nagano, so maybe that has something to do with it, but it has a gentle strength to it!
