Wakanami Junmai Ginjo Hisashinmu Hi-iri 720ml Rice used: 100% Jushinmu grown in Fukuoka Prefecture Rice used: 95.5% Jushinmu, 4.5% Yamadanishiki Rice polishing ratio: 55 Alcohol content: 15 The day after the nama-shu, we opened the bottle of hi-ire. The hi-ire was more cohesive than the nama-shu. The acidity is slightly more mature. However, the world view of umami acidity is the same. Both are delicious 😋.
