As usual, a glass at the Shinkansen bar on the weekend.
This Junmai Daiginjo-shu is made from Yamada-Nishiki rice polished to 50%.
The standing aroma foreshadows the mellow rice flavor to come.
When you take it into your mouth, the rich rice flavor comes rushing in. It is unusually sweet for Niigata Prefecture, which has many light, dry wines, but it is right in the middle of my strike zone as a sweet-tasting person.
I am grateful to the brewers who put so much effort into making this sake.
