CosIt is a gem with a strong sense of crispness on the tongue as it is called "super dry. It has a roughness that is typical of junmai sake, and it asserts itself without losing out to meals with a little stronger flavor. Today's dinner at our house is a mix of Japanese and Western dishes, and it is playing an active role. We enjoy it with bagna cauda, paella, and a few Japanese dishes.
