じゅんちょる
We have just received a bottle of "Yamahai Junmai Yukiwaitoshu" from Miyakeemon Shuzo, whose brewery is located in Hayase, Mihama-cho, a fishing town in Fukui, Japan. It is a pure rice brewed in Yamahai style, the quintessence of Hokuriku's "Hayaseura" men's sake.
Yamahai means that lactic acid bacteria are not added artificially, but are brewed with naturally occurring lactic acid bacteria from the brewery. It takes a lot of time and effort, but the result is a sake with deep flavor and sharpness.
