Okuroku Tokubetsu Junmai Shu Ikamishimo Classical
The first Classical from Okuroku, which is expected to be a big hit this year.
It is 90% low-polished, yet it is bursting with umami without any cloying taste. It has just the right amount of acidity and sharpness, making it classical but somehow modern.
It is also delicious.
