When I told him that my impression of their sake was that it was spicy, he replied, "Our sake is not too spicy. ◉Kamigamigawa Taisetsu Special Junmai A mild aroma with a hint of sweetness and a bitter aftertaste. The aftertaste is bitter. Kamikawa Taisetsu Junmai Ginjo 50% polished rice. Gentle umami, slightly acidic with a clean aftertaste. The finish is still slightly bitter. SHIRO" Ginpu A 50% polished junmai ginjo with white malted rice at a low 14%. As one would expect, it is slightly sweet with a sour citric acidity. When I showed him the picture of the Tokachi sake I drank earlier at the end, he said, "Oh, that was intentionally made a little spicy." It was a sake limited to Tokachi and was a raw sake, and they don't release it outside the prefecture now, so the dry image finally clicked with me 😁.
