Omachi, Nagano, Japan. Ichinoya Corporation. Ichinoya, Junmai, Yamae-Nishiki, Nama-no-Hashimoto Sake. I've been seeing Ryusuisen a lot lately, but I've never seen Ichinoya before, so I bought it. I bought it because it was the first time I had seen Ichinoya. The bottle opened easily without any noise and without any gassy feeling. The color is clear and colorless. The top-tasting aroma is softly fragrant, like sweet and sour apples, and is quite aromatic. The mouthfeel is not fizzy, but the acidity stimulates the tongue and gives it a gassy feeling. It has a freshness to it. The taste is impressive for its soft acidity, which is clean and clear. The soft sweetness follows, and then the whole thing is mild and smoothly fades away. There is also a slight spiciness to the taste. Hmmm... I think I would like a little more impact... Ingredients: Rice (domestic), Rice Koji (domestic) Rice used: 100% Yamae-Nishiki Rice polishing ratio:70%. Alcohol percentage: 15
