This summer is hot and long, so summer drinks are on the rise.
We compared the three brothers of Shinshu Kamerei Hitogokochi that we had in stock, and the second bottle was
Shinshu Kamerei Junmai Ginjo Hitogochi
It is a higher grade of the Junmai sake specs mentioned above, and the taste is so good that it is one of the top 3 in my opinion!
Although it was fire-aged, it had the Shinshu Kamerei-like shuwashu that slowly tickles the tongue, and a thicker sweetness than Junmai-shu, and the balance of sweetness, umami, and acidity was very much to my liking!
Rice polishing ratio: 55% (100% Hitogochiki from Nagano Prefecture is used)
Alcohol content: 15%.
