The rice is Yamadanishiki produced in Shimane Prefecture. The yeast is Association No. 9. Aroma of grains brewed with the blessings of the earth.
Dry ~❗️ It cuts cleanly, leaving a bitter taste. The umami of the rice can be felt deep within the bitterness. The lingering bitterness and umami after drinking is nice. It is drunk on its own, but seems to go well with sashimi.
