I like it when the fizziness subsides about 2 days after opening the bottle. At room temperature, it becomes bitter and astringent, so it is better to chill it. If you leave it in a bowl for a day, it loses its juiciness and becomes a sweet sake, but if you leave it in the bottle, the juiciness remains.
